Spinach and pomegranate salad

I love adding pomegranate seeds to my daily salads when preparing lunch or dinner as they make them a bit sweeter and definitely more delicious. This recipe is quick and easy to follow and all you need are few ingredients that you can get from any local market.

Ingredients:

  • 30g almonds/pecans/walnuts
  • 3 tbsp vinegar
  • 2 tbsp coconut oil
  • 1 tbsp honey
  • dash ground pepper and salt
  • 3 handful baby spinach
  • 1/2 cup pomegranate seeds

Directions:

  • In a large bowl, whisk together the vinegar, coconut oil, honey, salt and pepper to make a dressing.
  • Add the spinach, almonds/pecans/walnuts and pomegranate seeds to the bowl. Toss gently to mix and coat well.
  • Serve immediately.

  1. I made a similar salad like this a few years ago which had feta cheese crumbled through it. Yum yum yum!! 😀

  2. I love adding pomegranate to salads too! They make everything fresher with a hint of sweetness 🙂 I’d love to try this recipe with rice malt syrup in place of the honey to make it CF. Thanks for the idea 🙂
