Spinach and pomegranate salad

I love adding pomegranate seeds to my daily salads when preparing lunch or dinner as they make them a bit sweeter and definitely more delicious. This recipe is quick and easy to follow and all you need are few ingredients that you can get from any local market.




  • 30g almonds/pecans/walnuts
  • 3 tbsp vinegar
  • 2 tbsp coconut oil
  • 1 tbsp honey
  • dash ground pepper and salt
  • 3 handful baby spinach
  • 1/2 cup pomegranate seeds


In a large bowl, whisk together the vinegar, coconut oil, honey, salt and pepper to make a dressing.
  2. Add the spinach, almonds/pecans/walnuts and pomegranate seeds to the bowl. Toss gently to mix and coat well.
  3. Serve immediately.
