My top 3 recent lunches

Recently, my life has been like a roller-coaster! A lot of ups and downs with my workout, but I do my best to keep the healthy eating going. No excuses here! Since writing my thesis has overtaken my life together with my job and blogging, my meals are made in 5-10 minutes. Although I do keep them as easy as possible, they still look fabulous (in my opinion)! Still yummy and colourful – that’s my priority even if I’m super busy.

#1 Rucola, tomatoes, basil, onion, chestnuts, red pepper, sweet potatoes and salmon
