I love adding pomegranate seeds to my daily salads when preparing lunch or dinner as they make them a bit sweeter and definitely more delicious. This recipe is quick and easy to follow and all you need are few ingredients that you can get from any local market.
Ingredients:
- 30g almonds/pecans/walnuts
- 3 tbsp vinegar
- 2 tbsp coconut oil
- 1 tbsp honey
- dash ground pepper and salt
- 3 handful baby spinach
- 1/2 cup pomegranate seeds
Directions:
- In a large bowl, whisk together the vinegar, coconut oil, honey, salt and pepper to make a dressing.
- Add the spinach, almonds/pecans/walnuts and pomegranate seeds to the bowl. Toss gently to mix and coat well.
- Serve immediately.
