How to make vegan sushi

If you go vegan, you do not have to worry about eliminating your favourite lunch or dinner foods from your menu, such as sushi. Sushi is not raw fish. Sushi is the rice and you can be very creative when it comes to ordering it in a restaurant or even making it on your own.

“Sushi” refers to the slightly sweet, vinegary rice that is formed into balls and rolled up with seaweed. It can be filled up with raw fish, chicken, but also served with plenty of veggies such as raw carrots, cucumber, avocado and beets

Vegan sushi is one of the yummiest I have ever had and below I’m sharing with you a couple of ideas how to make your own sushi at home.

Ingredients

  • sushi sushi nori sheets
  • 1 cup brown rice
  • 1 cup water
  • 1 tablespoon brown rice vinegar
  • ½ teaspoon salt

Vegan topings

  • roasted veggies such as asparagus, beet, red pepper, sweet potatoes, mushrooms
  • raw peeled and sliced avocado
  • fresh sliced lengthwise into strips about ¼-insh around cucumber and carrot
  • shiitake mushrooms
  • tomato, sliced into super thin wedges

Preparation

Below you can see a video of how to form sushi after you cook the rice for around 10 minutes in a rice cooker/ a pan. Forming it nicely is not an easy task, but practice makes perfect.

For garnish you can use sesame seeds, lemon and/or lime zest, grated fresh ginger, sliced scallions, sliced jalapeño and for serving soy sauce, pickled ginger, flaky sea salt.
