I love soups. They warm me up on freezing days and fill me up. Although one of my favourite soups is pumpkin soup with coconut, I also like creamy & cheesy potato soup that is perfect for winter and autumn days.
55g butter (vegan or ghee butter)
50g cheese (vegan cheese for vegans)
250g peeled potatoes
1/2 tsp salt & pepper
1/2 glass water (more if needed)
100ml coconut milk
herbs of your choice
Melt butter in a saucepan.
Add chopped potatoes and onions. Toss them in the butter.
When well coated, add some salt, pepper & herbs of your choice.
Cook for about 10 minutes.
Add water and continue to cook for about 10-15 minutes.
Add the milk and blend the soup in a blender or food processor.
Taste and adjust seasoning.
Serve sprinkled with a few freshly chopped herbs and grated cheese.
