I love soups. They warm me up on freezing days and fill me up. Although one of my favourite soups is pumpkin soup with coconut, I also like creamy & cheesy potato soup that is perfect for winter and autumn days.
Ingredients
- 55g butter (vegan or ghee butter)
- 50g cheese (vegan cheese for vegans)
- 250g peeled potatoes
- 1 onion
- 1/2 tsp salt & pepper
- 1/2 glass water (more if needed)
- 100ml coconut milk
- herbs of your choice
Method
- Melt butter in a saucepan.
- Add chopped potatoes and onions. Toss them in the butter.
- When well coated, add some salt, pepper & herbs of your choice.
- Cook for about 10 minutes.
- Add water and continue to cook for about 10-15 minutes.
- Add the milk and blend the soup in a blender or food processor.
- Taste and adjust seasoning.
- Serve sprinkled with a few freshly chopped herbs and grated cheese.
