By now, I hope you have discovered what a paleo diet is and what its benefits are. Whilst there are some great paleo foods you can make, they require time and energy to make. Although it can be discouraging, particularly if you are a beginner trying to adapt to the new lifestyle, do not worry with time you get into grips with it.
Because breakfast is the most important meal of the day, I will share with you five breakfast recipes you can use. You can cook these in advance; evenings or during the weekend and quickly put together in the morning hot or cold to kick-start your day.
Kale and Red Pepper Frittata
Want to make some quick, delicious and healthy breakfast, then the kale and red pepper frittata will work perfectly for you.
Other ingredients you could use include; bacon, vegetables like spinach, tomatoes, broccoli, zucchini or asparagus and herbs like basil and oregano depending on your taste. When cooking, let all the ingredients set and combine on a stove then finish baking in the oven.
- 8 eggs
- 1 red onion (chopped)
- 1 red pepper (deseeded and chopped)
- 2 handfuls of chopped kale
- 2-3 tbsp. oil (olive/coconut)
- ½ milk (coconut/almond)
- ½ tbsp. Salt
- A pinch of pepper
- Heat the oven to 350º and heat the oil over medium heat then add the onion to the skillet and gently saute until soft. Add the red pepper, then add the kale and cook until it is just wilted.
- Beat the eggs in a bowl, add salt and pepper for seasoning then pour into the skillet and cook until the bottom is set.
- Place the skillet in the oven and bake until the eggs have cooked through. Slice and serve.
Sweet Potato Hash
You can make this in advance, as the process is time-consuming. Other ingredients you could add include; cabbage, lettuce leaves, carrots, mushrooms, leeks, bell peppers, eggplant and many more depending on your preference and creativity.
Making hash requires you to multitask. Therefore, you can chop the potatoes as the onions caramelize and the sausages brown then toss everything at the same time. This is because potatoes become crispy while baking together with the other ingredients.
- 3 eggs
- 2 Italian sausages (diced)
- 1 large onion (chopped)
- 3 tbsp. rosemary (fresh)
- 2 sweet potatoes (peeled and diced)
- 3 tbsp. olive oil
- Salt and black pepper (fresh)
- Preheat the oven to 425º and heat the olive oil over medium heat in a skillet then add onions and a pinch of salt. Cook until it is caramelized (around 30 min).
- Place the diced potatoes in a bowl with the rosemary and remaining oil.
- Cook the sausages until brown in a different skillet then add them and the caramelized onions into the bowl with chopped sweet potatoes. Season with salt and pepper and toss.
- Spread on a baking sheet and bake for 30-40 min until the potatoes have softened. You can then refrigerate for later or continue.
- Place the hash into a skillet, crack the eggs and bake for about 15 min.
Paleo Biscuits and Gravy
This is a great breakfast snack that you can make in 20-30 minutes. You can mix the ingredients for the biscuits as you caramelize the onions for the gravy to save on time.
Additionally, you can opt to leave the gravy chunky or blend it. Unmelted coconut oil is preferred, as it will coat just part of the flour hence the course crumbs while the melted one will make them tough. Also, to prevent the biscuits from falling apart, use good quality coconut flour. You can also add some almond flour to the coconut flour.
- 2 tbsp. coconut oil (solid)
- 1 cup of coconut flour
- ¼ cup almond milk
- 5 egg whites
- ¼ tbsp. salt
- 1 tbsp. baking powder
- 1 onion (medium, finely chopped)
- 1 ½ cups chicken broth
- 6 tbsp. coconut flour (almond flour also applicable)
- 1 tbsp. olive oil (extra virgin)
- 1 tbsp. oregano
- 1 ½ tbsp. Arrowroot powder
- ½ tbsp. garlic powder
- Salt and pepper
- For the gravy, heat the olive oil over medium heat then add onions to the skillet for about 25 min until they caramelize.
- Meanwhile, preheat the oven to 400º, mix the flour, salt, and baking powder then stir the coconut oil with the milk.
- In another bowl, beat the egg whites then mix with the flour mixture but do not over mix. Then scoop the mix using a cup onto the baking sheet repetitively until it is finished. It will form at least 8 biscuits then bake for around 15 min until golden.
- Add the flour and arrowroot on the caramelized onions stir then after about a minute add the broth, garlic powder, and oregano and simmer until it thickens. Add salt and pepper to taste. You can drizzle it over the biscuits and serve.
Spicy Southwestern Breakfast Bowl
If you have a big appetite, then this is the perfect paleo dish for you, as it will keep you full for longer. Using some southwestern flavors, add roasted sweet potatoes for starch an egg and plenty of vegetables.
Since it is not convenient to prepare such a large meal on a work morning, make the ingredients (veggies, sweet potatoes and onion mixture) on a Sunday or evening refrigerate and reheat while adding eggs in the morning.
- 2 sweet potatoes (large, peed and diced)
- 1 yellow onion (medium diced)
- 1 jalapeno (small, seeded and diced)
- ½ red and ½ green bell pepper each diced
- 3 cups of spinach
- 1 avocado (pitted and diced)
- 2 bacon strips
- 2 eggs
- Olive oil (extra virgin)
- 1 tbsp. chili powder
- Salt and pepper
- Heat the oven to 375º then place sweet potatoes on a baking sheet drizzle and sprinkle with olive oil, salt, and pepper respectively then bake for about 20 min.
- Over medium heat cook the bacon and remove once done, then add the onion, jalapeno and bell peppers into the skillet and saute until soft then add spinach and cook until wilted.
- Cook the eggs to your liking separately, then assemble the meal by diving the sweet potatoes into 2 bowls and topping up with the veggie mixture add the egg, bacon, and avocado.
Gluten-free Banana Bread
When drizzled with honey, it makes for a perfect breakfast/snack.
Banana can be used for a variety of paleo meals including this bread, which can be stored to be eaten later during the week or immediately, as it does not require much time.
- 4 bananas (ripe and mashed)
- ½ coconut flour
- 3 tbsp. coconut oil
- 4 eggs
- 1 tsp. vanilla
- 1 tbsp. Cinnamon
- ½ cup almond butter
- ¼ tsp. salt
- 1 tsp. each baking soda and powder
- Preheat oven to 350º then add the eggs, bananas, vanilla, and oil in a bowl and mix thoroughly.
- Add the flour, baking powder and soda, cinnamon and salt and make a wet mixture. Pour into the baking pan lined with parchment paper, place in the oven then bake for about an hour. To know it is fully cooked a toothpick placed in the bread will come off easily. Let the bread cool before serving.
